Ingredients
- 1 cup butter
- 1 cup sugar
- 4 eggs
- 1 pound can of cream corn
- ½ cup shredded jack cheese
- ½ cup shredded mild cheddar cheese
- 1 cup flour
- 1 cup yellow corn meal
- 4 teaspoons baking powder
- ½ teaspoon salt
Directions
Step 1
Preheat oven to 350
Step 2
Mix dry and wet ingredients separately, then combine together
Step 3
Take a second to reflect on your initial thought that this isn’t a vegetable then realize…if it’s got corn in it then it’s a vegetable and that is why tacos are a vegetable
Step 4
Pour mixture into greased 8×12 pan
Step 5
Reduce heat to 300
Step 6
Cook 1 hour or until golden brown
